Spicy Veggie Stew
This is a great recipe to have if anyone is starting to get those sick feelings. And this will help with your immune system. Spices are great antioxidants that can help fight on coming colds, if your low on energy, or if you just need a little kick! Cook on med-low for a simmer.
Dutch oven or Big pot or Crockpot(low 6 hrs High 3 hrs)
2 tbs olive oil
1 bag mixed veggies (frozen or fresh)
1 bag spinach or kale (frozen or fresh)
1 small yellow onion
1 can white Italian beans
1 can tomatoes diced no salt
2 sweet potatoes cut in ¼ inch cubes
2 bay leaves
1 cup chopped carrot
1 cup chopped celery
2 cups low sodium vegetable broth or chicken broth
½ tps onion powder
¼ tps thyme
¼ tps basil
½ paprika
2 cloves garlic
2tbs ground flaxseed
½ tps cayenne pepper
¼ red chili flakes
Dash of pepper and salt
2 tbs tomato paste (to add in the last 15 minutes of cooking)
Add the onion, carrots, and celery to the pot with 2 tbs olive oil. Cook until tender. Add broth and the remaining veggies and spices. Cook for 1 hour. In the last reaming 15 minutes add the tomato paste.
Serve with salad or Almond Butter and Honey sandwiches!!
