Pumpkin Muffins
¾ cup canned pumpkin
1 ½ cups whole wheat flour
¾ cup brown sugar
¼ cup olive oil
2 eggs
1/4 cup almond unsweetened milk
¾ tps baking powder
½ tps baking soda
¼ tps ground cloves
½ tps cinnamon
¼ tps salt
½ cup raisins
Mix the wet ingredients first. Eggs and sugar for 2 minutes, pumpkin and then the olive oil. In another bowl mix the dry ingredients. Add the dry 1 cup at a time and then add the almond milk and raisins. Cook at 375 for 15 mintues! Enjoy with milk 2% or tea or coffee!
