Easy Cooking time made easy!

Winter time is here! So that means I will be dusting off my Crockpot and cooking dinners at a shorter and easier time!! I love my Crockpots and all the recipes that I have collected over the years!! So if you’re here and reading this then you must be looking for a short cut to dinner time! And I have some great ones for you! I will post new 5 crockpot recipes each week to my facebook page! The shopping list, recipes and directions!! My recipes are from myself and Rival, the Best –Loved Slower Cooker Cook Book!

Okay so let’s get started!

Week 1 Jan 3rd -7th

Middle Eastern stew

1 can 28 oz crushed tomatoes

3 cups sliced zucchini

2 cups cubed and peeled eggplant

2 cups quartered sweet potatoes

1 ½ cup cubed and peeled butternut squash

1 cup drained chick peas

½ cup raisins or currants

1 tbs olive oil

1 ½ tps cinnamon

1 tps grated orange peel

¾ tps to 1 tps ground cumin

½ tps salt

½ tps paprika

¼ tps red pepper

1/8 tps ground cardamom

Serve with brown rice or couscous


Combine all ingredients except rice or couscous to slow cooker. Cover and cook on low for 5 or 5 ½ hours or until vegetables are tender. Serve with rice or couscous and enjoy!

Winters best bean soup

6 ounces of diced turkey bacon

8 cups of reduced sodium chicken broth 2 cups water

3 cans great northern beans drained

1 can (14 ounces) diced tomatoes no salt

1 package of frozen diced or sliced carrots

1 tps dried rosemary

1 tps black pepper


  1. Cook bacon and drain. Add to 5-7 quart Crockpot. Add the remaining ingredients.

  2. Cover on low for 8 hours or until beans are tender. Serve with almond butter sandwiches

Herbed artichoke chicken

1 ½ pounds boneless, skinless chicken breast

1 can (14 ounces) tomatoes no salt drained

1 can (14 ounces) artichoke hearts in water drained

1 small onion

½ kalamata olives pitted and sliced

1 cup fat free reduced chicken broth

¼ cup dry sherry (optional)

2 tps curry powder

1 tbs chopped Italian parsley

1 tps dried basil

1 tps dried thyme

¼ tps salt

½ black pepper


  1. Combine chicken, tomatoes, artichokes, onion, olives, broth, wine, and spices to 4-7 quart crockpot.

  2. Cover on low 6-8 hours or on high for 3 ½ to 4 hours or until chicken is no longer pink in the center.

  3. Serve with another veggie like kale or spinach and enjoy!

Turkey and lettuce cups

This one is not a Crockpot meal but is quick and tasty!

1 pound ground turkey

2 tbsp minced garlic

3tbsp olive oil

6 tbsp reduced and low sodium soy sauce (divided)

6 tbps sweet chill sauce (divided)

1 head of Boston leaf or iceberg lettuce

1 ½ cups shredded carrot

½ cup purple cabbage

1 cup cooked brown rice or basmati cooked


  1. Cook rice according to package. Rinse of lettuce and pat dry and separate onto plates.

  2. Add the oil and garlic to medium skillet to medium heat. Cook for 3 minutes. Add turkey and cook for 15 minutes. Add 3tbsp of soy sauce and add the 3 tbsp sweet chill sauce to the turkey mixture. Cook another 5 minutes and add to lettuce cups with carrots and cabbage. Add the rest of the soy sauce and sweet chili sauce to your cups. Plate with rice. And enjoy!
