Dark Chocolate Chip Peppermint Vegan Cookies


Who says you can't be healthy and have your sweets too? I love baking and making cookies around this time of year for my family, friends, and school teachers is one of my favorite pleasures to do. I have recreated one of my personal favorites and made it even more delicious and nutritious this time. Dark organic chocolate with all Gluten free ingredients and peppermint is what makes this cookie rock. 

Ingredients:

Preheat oven at 375 cook 8-10 minutes 

Dark organic cocoa powder 1/4 cup

1 1/2 cups unbleached all purpose flour (gluten free baking mix)

1tbs and 1/4 tps arrowroot cornstarch 

1 tbs and tps 1/2 baking powder

1/4 tps salt

1/2 cup organic cane sugar

1/4 cup  brown sugar

1/2 cup vegan butter (Earth balance) 

1/4 cup  puree organic pumpkin

1 tps real Vanilla 

1/4 tps peppermint 

6 candy canes crushed up

1/2 cup dark organic chips

Mix the dry ingredients in separate bowl.

In mixer add sugars and butter  mix 3 minutes

Add pumpkin mix 1 minute

Add Vanilla and peppermint mix 1 minute

Slowly add dry ingredients. Then add candy canes and Dark chips.

Chill for 3 hours or over night. 

Bake at 375 for 8- 10 mintues.
